how do they do in mud? would they dry out afterwards and be full of mud on the inside?

I think they probably will get mud in the but you could easily slide them over by loosening the clamp and cleaning them out. They are really designed to keep sticks and sharp rocks from cutting the stock rubber boot. Torrey designed them after some of the desert racers were cutting c.v. boots and damaging the joint.
